BUCATINI ALL’AMATRICIANA

Bring water to a rolling boil in a medium pot.

Add bucatini nests to boiling water, cook for 3-4 minutes until al dente. (This will go very quickly!)

Warm Amartriciana sauce in a flat skillet large enough to comfortably hold sauce and pasta.

Once it has achieved a boil, lower to a slow simmer.

Add the cooked pasta to the sauce and allow to cook together at a slow simmer for two minutes. Stirring frequently.

Turn off the heat and finish pasta by adding half of the pecorino to the pan.

Serve in your favorite bowls and add the last of pecorino to the top of the pasta along with crispy pancetta.
