CONFIT DUCK WITH FRISEE SALAD
To prepare the duck; Heat a heavy bottomed saute pan or cast iron skillet over medium low heat.
Add enough oil or duck fat to coat the pan – a few tablespoons should do it.
Place the duck leg skin side down in the pan. Adjust the heat to medium.
You want the skin to slowly render and crisp over the course of 10-15 minutes or so. Think of this as being similar to cooking bacon.
Lift up the breast occasionally to check on the color – you are going for a deep golden brown.
When the skin is crisped flip the duck leg over, lower the heat all the way, and cook for 4-5 minutes to finish heating the meat side.
Or you can leave it skin side down and transfer it to a 350 degree oven for 5-10 minutes to complete the reheating process.
While the duck is heating, combine the salad ingredients in a bowl and add dressing and salt to taste.
Toss and arrange the salad on two plates.
Place your finished duck leg on top and drizzle with remaining vinaigrette if desired.
