Minestrone Soup with Arugula Pistachio Pesto

Preparation Instructions

Set your pesto out at room temperature and allow it to warm until the olive oil liquefies.

Bring 3-4 quarts of water to a boil.

Meanwhile warm the soup gently, stirring to prevent it from sticking to the pot and scorching.

When the soup is hot and the pesto is tempered, salt the water generously, and boil the pasta for 2-3 minutes or until cooked to your liking.

Stir it into the soup. Ladle into bowls and top with pesto.
