Smoked Tofu Yakisoba Noodle Kit

Boil the noodles – bring 4-6 quarts of water to a rolling boil.

Prepare a large bowl of cold water.

Add the noodles to the boiing water and cook for about 45 seconds, stirring them vigorously.

Then drain them and rinse them in the cool water. Drain again.

Heat a 12-inch skillet or wok over high heat. When the pan begins to give off whisps of smoke, and a tablespoon or so of oil.

Quickly add the vegetables and tofu and cook for 1-2 minutes, stirring and tossing frequently.

Add the noodles and stir fry one more minute.

Add the sauce, toss everything to coat, and reduce the heat to medium.

Cook for 1 more minute, allowing the noodles to sit a little longer in between tossing and begin to caramelize.
