UNCLE ANDY’S PANCAKES

Pancake Mix DRY MIX ONLY – YOU WILL NEED WET INGREDIENTS

Makes about 10 medium size pancakes. With 4 kids who request pancakes every single day, Chef Andrew has cooked a lot of pancakes over the years and has honed his pancake game to a science. We’ve mixed all the dry ingredients to make it easier for you! 

Ingredients:

1 Big Tree Grocery Dry Pancake Mix
6 Tablespoons Butter
2 Whole Eggs
3 Cup Buttermilk (See Notes for Alternatives)
Juice of 1 lemon
Milk or water if necessary
Butter or Ghee for cooking

Instructions:

Put dry mix in mixing bowl. Melt butter either on low heat on stove or in container in microwave. Whisk eggs in a separate bowl and add buttermilk and mix eggs and buttermilk well. Add egg and buttermilk mixture into dry mix and mix lightly. Add melted butter and lemon juice and mix until incorporated but make sure to leave it kinda lumpy. If it seems too thick (some buttermilks are more viscous than others) add a little milk or water to thin out a bit. You are ready to make pancakes!

Cook pancakes over medium heat with butter or ghee (clarified butter makes the BEST pancakes) until golden brown on both sides and cooked through.

Notes: If you don’t have buttermilk in your fridge, don’t fret – there are alternatives. Kefir is a 1:1 substitute for buttermilk. You can use 2 cups unsweetened yogurt mixed with 1 cup milk. Or you can just use milk. Usually about 2 ½ cups of milk but increase the lemon juice to juice of 2 lemons – it’s the acidity in the buttermilk/yogurt/kefir that you are after. 

If you’re only feeding a few people and only need 5 medium pancakes, you can just use half of the mix and cut each wet ingredient in half.
