Instructions

Cast Iron Pan Method

(Preferred – if you have a large enough pan)

Preheat your oven to 375.

Season your fish generously on both sides with salt and pepper.

Preheat your pan over medium high until little wisps of smoke begin to come from the surface.

Add a few tablespoons of oil and swirl the pan to coat. Place the fish in and cook for 2 or 3 minutes over medium to medium high heat.

When nicely browned, flip the fish over and immediately transfer it to the oven.

Cook for 10-12 minutes or until the fish is flaking at the bone.

 

Broiler Method

Preheat your broiler.

Season your fish generously on both sides with salt and pepper.

Oil a rimmed baking sheet and place the fish on it.

Park it under the broiler until it is cooked through and browned on top, probably around 12-14 minutes depending on the size of the fish and your broiler.

If it seems to be getting too dark, move it further from the heating element or loosely tent it with foil.
